Orzo Salad with Balsamic Vinegar Syrup
This Salad is currently among Kathy and my favorite summer salads.It is particularly good with cherry tomatoes and fresh basil from the garden.
Ingredients
Balsamic Syrup
- 2/3 cup balsamic vinegar
- 2 Tbs honey
- 1 Tbs Dijon mustard
Salad
- 1/2 box orzo pasta, regular or whole wheat
- 1 pint of cherry tomatoesÂ
- 6 oz fresh mozzarella cheese
- 1/2 cup fresh basal leaves (packed)
- 1/4 olive oil
- salt and pepper
Balsamic Syrup
Combine the vinegar, honey, and mustard in a small pan and bring to a boil. Reduce heat to med/low and cook for 10 minutes, let cool completely before using.
Salad
Cook the orzo according the the instructions on the box. Rinse and cool with cold water. Half the cherry tomatoes and add to the orzo. Cube the fresh Mozzarella and add tot he bowl as well. cut the basal into strips and add to the bowl. Toss everything with the olive oil. Drizzle with the Balsamic Syrup prior to serving.
